This from my good friends Marc-Antoine, Blandine & their beautiful daughter Lilou from France. I sent them the Burger bar cookbook (see below) because since they live in the South of France, I thought it would be a good idea to introduce them to fun American foods.
Here is their update:
“Hello my dear friend,
We inaugurated today the “burger bar” cookbook, for our National day (note: July 14th), with the roasted squash-quinoa burger recipe. Tasted good!
Although we kept the spirit of it, we made a few small adjustments to adapt it to what we had in our fridge and what we can find in France: the potato flakes were replaced by a little buckwheat; the buns turned themselves into rustic slices of Aveyron bread that we had wet with the slices of tomato; and we preferred a “sublime of tomato” and capres instead of the jams and ketchup of the recipe.”
Looks like the French couldn’t help themselves, upgraded the recipe with rustic artisan bread and couldn’t deal with ketchup. Oh well! I tried!

That sounds like a pretty awesome adaptation. I might try to do that or something similar… or off in another direction.
What, did you expect anything else from us? We can’t help being French!
Good to hear from you, Frenchie! Hope everything is well on the Cote d’Azur. I’ll see you next week. Bises.
